Hobo Meal consist of scramble eggs, whole corn and meat rolled in a flour tortilla shell. Quick dinner. It takes about 20 minutes to prepare. Makes 5 tortilla rolls.

So lets get started!

Utensils and oven setting:

  • One Large pancake pan
  • One Mixing bowl
  • One medium skillet

 

Ingredients:

  • 6 eggs
  • ½ pound of fresh ground beef
  • 1½ cups of canned whole corn
  • Butter
  • Spices: Garlic, pepper and salt

Whip all 6 eggs in a bowl. Add the corn to the whipped eggs. Set aside. You are ready for the next step. Picture # 1

Add to the skillet ½ lb of hamburger. Cook the meat until done: add spices to meat. Spice to taste (pepper, salt, and garlic salt.) When done add the eggs and corn mixture to the cooking hamburger. Cook until all the eggs are scramble thoroughly with the hamburger. Set this aside to be added to the flour tortillas. Picture # 2

Place the pancake pan on the stove burner with temperature setting of medium high and melt ½ teaspoon of butter. Place a tortilla shell on the pancake pan. Heat the tortilla shell until soft approximately 1 minute. Flip the tortilla shell over. Add about 3 heaping tablespoons of scramble eggs, corn and meat mixture to the middle of the tortilla shell. Fold both ends of the tortilla shell to the middle and fold once more in half. Heat on one side until lightly brown approximately 1-2 minute. Remove the tortilla to a plate and serve. Makes approximately 5 servings. Picture # 3
