Hobo Meal - Borscht consist of beef, tomatoes, onions, beets, and more. Dinner in a bowl. It takes about 1 hour to prepare. Serve while very hot.

So lets get started!

Utensils:

  • 1 large stew pot
  • 1 Mixing and serving bowl
  • 4 serving bowls

 

Ingredients:

  • 5 eggs
  • ¾ pound beef round steak- cut in 1 inch cubes.
  • 1 ½ cups of canned strips of beets drained.
  • 1 cup of canned tomatoes - sliced -drained 
  • 1 cup of small - baby onions
  • 4 cups of water
  • 1 tablespoon of lemon juice
  • ¾ cup of sugar
  • ¾ teaspoon of salt

Add beets, tomatoes, onions, beef, and water to the stew pot. Simmer for about 30 minutes. Picture # 1

Add salt, sugar and lemon juice to the mixture bringing it to a boil for 30 minutes.  Picture # 2

Beet the eggs in a separate mixing serving bowl with a pinch of salt. Add the very hot borscht slowly while stirring well to keep the eggs from separating. Serve and enjoy!
